Ingredients
  

  • 1 sheet of puff pastry homemade or store-bought
  • 1 cup ricotta cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon fresh thyme or basil chopped
  • 2 –3 medium ripe tomatoes thinly sliced
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 egg beaten (for egg wash)

Instructions
 

Preheat the oven

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the pastry

  • Roll out the puff pastry on a floured surface. Shape it into a rough circle, about 12 inches wide.

Mix ricotta filling

  • In a bowl, combine ricotta, olive oil, garlic, thyme, salt and pepper. Stir until smooth and creamy.

Spread the ricotta

  • Spread the ricotta mixture in the center of the pastry, leaving a 2-inch border around the edges.

Layer the tomatoes

  • Arrange the tomato slices over the ricotta in a circular pattern. Slightly overlap for even coverage.

Add cheese and seasoning

  • Sprinkle grated Parmesan over the tomatoes. Add a pinch of salt and pepper for extra flavor.

Fold the edges

  • Fold the edges of the pastry over the tomatoes. Crimp gently to create a rustic look.

Brush with egg wash

  • Brush the folded pastry edges with beaten egg. This gives a shiny, golden crust after baking.

Bake the galette

  • Place the galette on the baking sheet. Bake in the oven for 30–35 minutes until golden and bubbly.

Cool slightly before slicing

  • Let the galette cool for 5–10 minutes. This helps it set and keeps the slices intact.
