Ingredients
  

  • 2 cups Peruvian beans or black beans, soaked overnight
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 medium carrot chopped
  • 1 red bell pepper chopped
  • 2 medium tomatoes chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions
 

Soak the Beans

  • Put beans in water overnight. This makes them soft and easier to cook.

Heat the Oil

  • Warm olive oil in a large pot over medium heat.

Cook Onions and Garlic

  • Add onions and garlic. Stir for 3–4 minutes until soft and fragrant.

Add Carrots and Peppers

  • Mix in carrots and bell peppers. Stir and cook 5 minutes.

Add Tomatoes and Spices

  • Add tomatoes, cumin, and paprika. Stir well to mix flavors.

Add Beans and Broth

  • Drain soaked beans. Add them with 4 cups of broth.

Simmer Slowly

  • Bring to a boil. Reduce heat. Cover and cook 40–45 minutes until beans are soft.

Season with Salt and Pepper

  • Taste the beans. Add salt and pepper as needed.

Add Lime Juice

  • Squeeze lime juice into the beans. Stir gently for freshness.

Garnish and Serve

  • Add chopped cilantro on top. Serve hot with rice or bread.

Notes

  • Use fresh Peruvian beans for the best taste.
  • Black beans or kidney beans work if you do not have Peruvian beans.
  • Add a small potato for extra creaminess.
