Ingredients

  • 2 cups fresh pineapple chopped
  • ½ cup sugar adjust to taste
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp heavy cream optional for creaminess

Instructions

Prepare the Pineapple

  • Wash, peel, and chop the fresh pineapple into small pieces. This helps it cook evenly.

Cook the Pineapple

  • Put the pineapple in a medium saucepan. Cook on medium heat for 5–6 minutes.

Add Sugar

  • Sprinkle sugar over the pineapple. Stir continuously until it dissolves completely.

Mix Cornstarch and Water

  • In a small bowl, mix cornstarch with water. Make a smooth slurry without lumps.

Thicken the Sauce

  • Slowly pour the cornstarch mixture into the pineapple. Stir constantly until thickened.

Add Vanilla Extract

  • Turn off the heat and add vanilla extract. Stir to combine for flavor depth.

Optional Cream Addition

  • For extra creaminess, add heavy cream. Stir well until smooth and glossy.

Blend for Smooth Sauce

  • Use a blender or immersion blender to puree sauce until smooth. Skip for chunky texture.

Cool Slightly

  • Let the sauce cool for 5–10 minutes. It thickens further as it cools.

Serve or Store

  • Drizzle over ice cream immediately or store in an airtight container in the fridge.

Notes

  • Use ripe pineapple for the best sweetness and aroma.
  • Adjust sugar according to your pineapple’s natural sweetness.
  • For a tropical twist, add a splash of coconut milk.
  • Make it chunky or smooth depending on your preference.
  • Can also be used on cheesecake, pancakes, or waffles.
  • Add a pinch of cinnamon or ginger for a spiced flavor.
