Ingredients
  

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/2 cup cooked vegetables bell peppers, spinach, or onions
  • 1/4 cup cooked chicken or turkey optional
  • 2 large tortillas or flatbread
  • Salt and pepper to taste

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). Grease a muffin tin.

Prepare Egg Mixture

  • In a bowl, whisk eggs, milk, salt and pepper.

Prepare Filling

  • Mix vegetables, cheese and cooked chicken if using.

Assemble Pinwheels

  • Spread filling over tortillas evenly. Roll tightly into a log shape.

Slice Rolls

  • Cut into small pinwheel slices.

Place in Muffin Tin

  • Arrange slices in muffin cups.

Add Egg Mixture

  • Pour egg mixture over each pinwheel.

Bake

  • Bake for 18–20 minutes until eggs are set and lightly golden.

Serve

  • Let cool slightly and serve warm.
