Ingredients
  

  • 500 g thick-cut bacon chopped
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • ½ cup brown sugar packed
  • ¼ cup apple cider vinegar
  • ¼ cup brewed coffee
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • Optional: pinch of cayenne for heat

Instructions
 

Cook the Bacon

  • Place chopped bacon in a large skillet. Cook over medium heat until crispy, about 10–12 minutes.

Remove Bacon

  • Take bacon out of skillet, leaving fat behind. Drain on paper towels. Keep the fat in the skillet.

Cook Onions

  • Add chopped onions to bacon fat. Cook over medium heat 10 minutes until soft and caramelized.

Add Garlic

  • Stir in minced garlic. Cook 1–2 minutes until fragrant but not burnt.

Add Sugar and Spices

  • Add brown sugar, chili powder, smoked paprika and black pepper. Stir well to combine with onions.

Add Bacon Back

  • Return cooked bacon to the skillet. Mix well with onions and sugar mixture.

Add Coffee and Vinegar

  • Pour brewed coffee and apple cider vinegar into the skillet. Stir to combine all ingredients.

Simmer the Jam

  • Reduce heat to low. Cook 20–25 minutes until mixture thickens and becomes jam-like. Stir occasionally.

Blend the Jam

  • Use a food processor or blender. Pulse until desired texture—slightly chunky is best.

Cool and Store

  • Transfer bacon jam to an airtight container. Cool to room temperature before refrigerating.

Notes

  • Use Thick-Cut Bacon: Provides more flavor and better texture than thin slices.
  • Adjust Sweetness: Add more or less brown sugar according to taste.
  • Add Heat: Include a pinch of cayenne or red pepper flakes for a spicy kick.
  • Texture Control: Blend partially for chunky jam, or fully for smooth consistency.
  • Make Ahead: Bacon jam can be made a week in advance and stored in the fridge.
