Ingredients
  

For the Prickly Pear Syrup:

  • 2 –3 medium prickly pears peeled or 1 cup prickly pear juice
  • 1/2 cup sugar
  • 1/2 cup water

For the Lemonade:

  • 1/2 cup fresh lemon juice about 3–4 lemons
  • 2 cups cold water or sparkling water
  • Ice cubes
  • Lemon slices and mint leaves for garnish

Instructions
 

Prepare Prickly Pear Syrup

  • In a small saucepan, combine prickly pear pulp, sugar, and water. Heat gently for 5 minutes, stirring to dissolve sugar.

Blend and Strain Syrup

  • Blend the mixture until smooth. Strain through fine mesh to remove seeds. Let syrup cool.

Squeeze Lemons

  • Juice 3–4 fresh lemons to get 1/2 cup lemon juice. Remove seeds.

Mix Lemonade Base

  • In a pitcher, combine cooled prickly pear syrup, fresh lemon juice and cold water. Stir well.

Adjust Sweetness

  • Taste lemonade. Add more syrup or water if needed to balance sweetness and tartness.

Add Ice

  • Fill glasses with ice cubes. Pour lemonade over ice for a chilled drink.

Garnish

  • Add lemon slices and fresh mint leaves to each glass for color and aroma.

Serve

  • Serve immediately or chill in fridge for 30 minutes for extra refreshing taste.

Notes

  • Use sparkling water instead of still water for fizzy prickly pear lemonade.
  • Make syrup ahead of time and store in fridge for 1 week.
  • Add a splash of lime juice for extra zing.
  • Use honey instead of sugar for a natural sweetener.
  • Garnish with edible flowers for a festive look.
