Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon fresh rosemary chopped
  • 2 cloves garlic minced
  • 1 teaspoon instant yeast
  • 3/4 cup warm water
  • 2 tablespoons olive oil
  • 1 tablespoon butter melted

Instructions

Prepare the dough

  • Mix flour, salt, sugar and instant yeast in a large bowl. Stir well to combine evenly.

Add liquids

  • Pour warm water and olive oil into dry ingredients. Mix gently until a sticky dough forms.

Knead the dough

  • Transfer dough to a lightly floured surface. Knead for 8–10 minutes until smooth and elastic.

First rise

  • Place dough in a greased bowl. Cover with a cloth. Let it rise for one hour until doubled in size.

Prepare garlic and rosemary

  • While dough rises, chop rosemary and mince garlic. Set aside for later mixing.

Add flavors

  • Gently press dough and fold in garlic and rosemary evenly without deflating.

Shape the dough

  • Shape dough into a round ball. Ensure garlic and rosemary are evenly distributed inside.

Prepare skillet

  • Heat cast iron skillet with parchment paper. Grease lightly with olive oil or butter.

Place dough in skillet

  • Place shaped dough carefully into the skillet. Cover loosely and let rise 20 minutes.

Preheat oven

  • Preheat oven to 200°C (400°F) while dough is rising.

Brush with butter

  • Brush dough top with melted butter for golden crust.

Bake the bread

  • Bake in preheated oven for 25–30 minutes until golden brown and crusty.

Check doneness

  • Tap bread bottom—it should sound hollow. Ensure inside is fully baked.

Cool slightly

  • Remove skillet carefully. Let bread cool on a rack for 5–10 minutes.

Slice and serve

  • Slice rustic bread with a serrated knife. Serve warm for best flavor.

Notes

  • Use fresh garlic for the best aroma.
  • Try adding thyme or oregano with rosemary.
  • For softer crust, brush with olive oil instead of butter.
  • Add grated Parmesan cheese for a cheesy flavor.
  • Use bread flour instead of all-purpose flour for chewier texture.
  • Let dough rise longer for more airy bread.
  • Make mini loaves in small skillets for individual servings.
  • Serve with dipping olive oil and balsamic vinegar.
  • Sprinkle sea salt on top for extra crunch.
