Ingredients
  

  • 1 pound Italian sausage mild or spicy
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 4 medium Yukon Gold potatoes diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 cups chopped kale stems removed
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese

Optional Garnishes

  • Extra Parmesan cheese
  • Fresh parsley
  • Cracked black pepper
  • Red pepper flakes
  • Crusty bread

Instructions
 

Brown The Sausage

  • Heat olive oil in a large pot. Cook the sausage until browned, breaking it into small pieces.

Cook The Onion

  • Add the diced onion and cook until soft and translucent.

Add The Garlic

  • Stir in the minced garlic and cook for one minute until fragrant.

Add The Potatoes

  • Mix the diced potatoes into the pot and stir well.

Pour In The Broth

  • Add the chicken broth and bring the soup to a gentle boil.

Simmer

  • Reduce the heat and cook for about twenty minutes until the potatoes are tender.

Add The Seasonings

  • Stir in the Italian seasoning, salt, black pepper and red pepper flakes if using.

Pour In The Cream

  • Add the heavy cream and stir gently until combined.

Add The Kale

  • Mix in the chopped kale and cook for about five minutes until tender.

Add Parmesan

  • Stir in the grated Parmesan cheese until melted.

Taste And Adjust

  • Taste the soup and adjust the seasoning if needed.

Serve Warm

  • Ladle the soup into bowls and garnish with extra Parmesan and parsley before serving.
