Instructions
 

Heat Olive Oil

  • In a medium saucepan, heat olive oil over medium heat until warm.

Cook Onion and Garlic

  • Add chopped onions and garlic. Cook for 3–4 minutes until soft and fragrant.

Add Tomatoes

  • Stir in diced fresh tomatoes or canned tomatoes. Cook for 5–6 minutes until softened.

Add Broth and Herbs

  • Pour in the broth. Add basil, oregano, salt and pepper. Stir to combine.

Simmer the Soup

  • Bring soup to a gentle simmer. Let it cook for 10 minutes to blend the flavors.

Blend Soup (Optional)

Add Cream

Cook Tortellini
