Ingredients
  

For Chicken & Sauce

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons parsley chopped

For Pasta & Veggies

  • 8 oz bowtie pasta farfalle
  • 2 cups fresh broccoli florets
  • 1/4 cup grated Parmesan cheese

Instructions
 

Cook Bowtie Pasta

  • Boil water in a medium pot. Add salt and bowtie pasta. Cook 10–12 minutes until al dente.

Steam Broccoli

  • During last 3 minutes of pasta cooking, add broccoli to the pot. Drain pasta and broccoli together.

Season Chicken

  • Pat chicken dry. Sprinkle garlic powder, salt and pepper evenly on both sides.

Heat Skillet

  • Heat butter and olive oil in a large skillet over medium heat. Wait until hot but not smoking.

Sear Chicken

  • Place chicken in skillet. Cook 5–6 minutes per side until golden brown and cooked through.

Remove Chicken

  • Transfer chicken to a plate. Keep warm. Don’t discard skillet juices.

Make Cowboy Butter Lemon Sauce

  • Add chicken broth and lemon juice to skillet. Stir to scrape browned bits from pan. Simmer 2–3 minutes.

Combine Pasta & Broccoli

  • Add cooked bowtie pasta and broccoli to skillet. Toss gently with the sauce until coated.

Add Chicken

  • Return chicken to skillet on top of pasta and broccoli. Spoon sauce over chicken to coat.

Garnish & Serve

  • Sprinkle chopped parsley and grated Parmesan over the top. Serve immediately while warm and flavorful.

Notes

  • Use fresh lemon juice for bright flavor; bottled lemon juice works in a pinch.
  • Swap chicken breasts for thighs for juicier meat.
