Ingredients
  

  • 2 cups cooked and chilled rice
  • 2 chicken breasts diced
  • 4 cloves garlic minced
  • 2 eggs
  • 1 cup mixed vegetables carrots, peas, corn
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 green onions sliced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon cornstarch for chicken

Instructions
 

Prepare the Chicken

  • Place diced chicken in bowl. Add salt, pepper and cornstarch. Mix well to coat evenly.

Heat the Pan

  • Heat one tablespoon oil in wok. Make sure pan is very hot before adding chicken.

Cook the Chicken

  • Add chicken in single layer. Cook without stirring for two minutes to develop crispy crust.

Flip and Finish Cooking

  • Stir chicken and cook until fully done. Remove from pan and set aside.

Cook the Garlic

  • Add remaining oil to pan. Add minced garlic. Cook for 30 seconds until fragrant but not burnt.

Scramble the Eggs

  • Push garlic to side. Crack eggs into pan. Scramble quickly until fully cooked.

Add Vegetables

  • Add mixed vegetables to pan. Stir fry for two to three minutes until slightly tender.

Add the Rice

  • Add cold rice to pan. Break clumps gently. Stir well to combine evenly.

Add Sauces

  • Pour soy sauce, oyster sauce and sesame oil. Stir well so rice absorbs flavors evenly.

Return Chicken

  • Add crispy chicken back into pan. Mix everything together thoroughly.

Finish and Garnish

  • Cook for two more minutes on high heat. Add green onions. Serve hot immediately.

Notes

  • Use leftover rice from previous day.
  • Add chili flakes for spicy version.
  • Replace chicken with shrimp or tofu.
  • Add bell peppers for extra crunch.
  • Use low sodium soy sauce if needed.
