  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard

Instructions
 

Preheat Oven

  • Preheat oven to 400°F (200°C). Make sure oven rack is in the center.

Prepare Pork

  • Trim excess fat and silver skin from pork. Pat dry with paper towels.

Mix Seasonings

  • Combine garlic powder, onion powder, thyme, salt and pepper in a small bowl.

Season Pork

  • Rub pork with olive oil and then coat with seasoning mixture evenly.

Sear Pork

  • Heat oven-safe skillet over medium-high heat. Sear pork 2–3 minutes per side until golden brown.

Bake Pork

  • Transfer skillet to oven. Bake for 15–20 minutes until internal temperature reaches 145°F (63°C).

Rest Pork

  • Remove pork from skillet. Tent with foil and rest 5–10 minutes before slicing.

Make Dijon Cream Sauce

  • In same skillet, add heavy cream and Dijon mustard. Stir over medium heat until smooth and slightly thickened. Add lemon juice if desired.

Slice Pork

  • Slice pork into 1/2-inch thick medallions. Arrange on serving plate.

Serve with Sauce

  • Pour Dijon cream sauce over sliced pork. Garnish with fresh parsley and serve immediately.
