Ingredients
  

  • 5 medium potatoes peeled and diced

  • 1 small onion finely chopped
  • 2 cloves garlic minced

  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 tablespoon flour for thickening
  • 2 tablespoons chopped fresh parsley

Instructions
 

Prepare the Potatoes

  • Peel the potatoes and cut them into small cubes. Rinse them with cold water to remove extra starch.

Melt Butter and Oil

  • Place a medium pot on the stove over medium heat. Add butter and olive oil and let them melt together.

Cook the Onion

  • Add chopped onion to the pot. Cook for about three minutes until the onion becomes soft and slightly golden.

Add the Garlic

  • Add minced garlic to the pot. Stir and cook for one minute until the garlic smells fragrant.

Add the Potatoes

  • Add diced potatoes to the pot. Stir well so the potatoes are coated with butter and onion mixture.

Add Seasonings

  • Sprinkle salt, black pepper, paprika and dried thyme over the potatoes. Stir gently so the spices spread evenly.

Pour the Broth

  • Pour chicken broth into the pot. The liquid should mostly cover the potatoes for proper simmering.

Simmer the Potatoes

  • Cover the pot with a lid. Let the potatoes simmer for about 15 minutes until they become soft and tender.

Thicken the Stew

  • Mix flour with two tablespoons of water. Add this mixture to the pot and stir gently to thicken the broth.

Final Simmer

  • Cook for another three minutes until the broth becomes slightly thick and creamy.

Add Fresh Parsley

  • Sprinkle chopped parsley on top of the potatoes. Stir lightly for fresh flavor and color.

Serve Warm

  • Turn off the heat and let the pot
