Ingredients
  

  • cups red lentils
  • 1 onion chopped

  • 1 teaspoon cumin powder
  • ½ teaspoon turmeric
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 6 cups water or vegetable broth
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish optional

Instructions
 

Rinse the Lentils

  • Wash lentils with clean water. Rinse until water becomes clear.

Heat the Oil

  • Place pot on medium heat. Add olive oil and warm gently.

Cook Onion

  • Add chopped onion. Cook until soft and light golden.

Add Garlic

  • Add minced garlic. Stir and cook for one minute.

Add Vegetables

  • Add carrots, potato and tomato. Stir well and cook for three minutes.

Add Spices

  • Add cumin, turmeric, salt and pepper. Mix well.

Add Lentils

  • Add rinsed lentils to the pot. Stir gently.

Add Water

  • Pour in water or broth. Mix everything well.

Boil the Soup

  • Bring to a boil. Cook on medium heat.

Simmer Gently

  • Reduce heat to low. Cover and simmer for 25 minutes.

Stir Occasionally

  • Stir sometimes to stop sticking at the bottom.

Check Texture

  • Lentils should be soft and thick.

Add Lemon Juice
