Ingredients

  • 2 tuna steaks sushi grade
  • ¼ cup white sesame seeds
  • 2 tablespoons black sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • Salt to taste
  • Optional wasabi or soy sauce for serving

Instructions

Prepare the Tuna

  • Pat tuna steaks dry with paper towels. This helps the sesame crust stick better.

Season the Tuna

  • Sprinkle salt, pepper, and garlic powder evenly on both sides of tuna steaks.

Make the Coating

  • In a small bowl, mix soy sauce and sesame oil until well combined.

Coat the Tuna

  • Brush soy mixture over tuna steaks. Make sure all sides are lightly coated.

Add Sesame Seeds

  • Mix white and black sesame seeds on a plate. Press tuna gently into seeds.

Heat the Pan

  • Heat olive oil in a skillet over high heat until very hot.

Sear First Side

  • Place tuna in hot pan. Sear for about one and half minutes.

Flip Carefully

  • Turn tuna gently using tongs. Sear second side for one and half minutes.

Sear the Edges

  • Hold tuna with tongs. Lightly sear edges for extra crust.

Rest the Tuna

  • Remove tuna from pan. Let it rest for two minutes before slicing.

Slice and Serve

  • Slice tuna against the grain. Serve immediately while warm.

Notes

  • Use sushi grade tuna for best texture and safety.
  • Do not overcook tuna. It becomes dry very fast.
  • Add crushed red pepper for a spicy kick.
  • Use tamari instead of soy sauce for gluten free option.
  • Try a honey soy glaze for a sweet version.
  • Serve with sesame ginger sauce for extra flavor.
