Ingredients
  

  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 14-ounce can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon oregano
  • Salt and black pepper to taste
  • 8 –10 small tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

Season the Beef

  • Season beef with salt, pepper, cumin, paprika, chili powder and oregano. Rub spices evenly over the meat.

Sear the Meat

  • Heat olive oil in a pot. Sear beef on all sides until browned. This locks in flavor and juices.

Cook Aromatics

  • Add onion and garlic to the pot. Cook for 3–4 minutes until soft and fragrant.

Add Liquid

  • Pour in beef broth and diced tomatoes. Stir gently and bring to a light simmer.

Slow Cook the Beef

  • Cover and cook on low heat for 2 hours until beef becomes tender and easy to shred.

Shred the Meat

  • Remove beef and shred using two forks. Return shredded beef to the sauce and mix well.

Warm Tortillas

  • Heat tortillas in a pan or microwave until soft and warm for serving.

Assemble Tacos

  • Fill tortillas with shredded beef. Top with cilantro and a squeeze of fresh lime juice.
