Ingredients
  

For the Rice

  • 2 cups sushi rice
  • cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

For the Shrimp

  • 1 pound shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Toppings

  • 1 avocado sliced
  • 1 cucumber sliced
  • 1 carrot shredded
  • 1 cup edamame
  • 1 sheet nori cut into strips
  • 1 tablespoon sesame seeds
  • Pickled ginger

Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce

Instructions
 

Cook the Rice

  • Rinse sushi rice until water runs clear. Cook according to package instructions.

Season the Rice

  • Mix rice vinegar, sugar and salt. Stir into warm rice.

Prepare the Shrimp

  • Season shrimp with garlic powder, salt and black pepper.

Cook the Shrimp

  • Heat oil in a skillet. Cook shrimp for 2 minutes per side.

Prepare Vegetables

  • Slice avocado and cucumber. Shred carrots and prepare toppings.

Make the Sauce

  • Mix mayonnaise, sriracha and soy sauce until smooth.

Build the Bowls

  • Add rice to bowls. Arrange shrimp and toppings neatly on top.

Add Sauce

  • Drizzle spicy mayo over the bowls.

Serve

  • Serve immediately and enjoy fresh flavors.
