Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup barbecue sauce your favorite brand
  • ½ cup chicken broth or water
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp chili powder optional for extra heat
  • 6 sandwich buns or rolls
  • Optional toppings: coleslaw pickles, extra barbecue sauce

Instructions

Prepare the Chicken

  • Trim any excess fat from chicken. Place in the slow cooker, making sure pieces are evenly spaced.

Add Onion and Garlic

  • Sprinkle chopped onion and minced garlic over the chicken for added flavor and aroma.

Season the Chicken

  • Add smoked paprika, chili powder, salt, and black pepper. Season both sides lightly for even flavor.

Pour Liquids

  • Pour barbecue sauce and chicken broth over the chicken. Make sure all pieces are coated evenly.

Cook in Slow Cooker

  • Cover slow cooker with the lid. Cook on low for 4 hours or until chicken is fully tender and shreds easily.

Shred the Chicken

  • Remove chicken from slow cooker. Use two forks to shred into bite-size pieces.

Mix Chicken with Sauce

  • Return shredded chicken to slow cooker. Stir to coat all pieces evenly with the barbecue sauce.

Prepare Sandwich Buns

  • Slice buns in half. Toast lightly if desired for extra texture and warmth.

Assemble the Sandwiches

  • Spoon shredded BBQ chicken onto each bun. Top with coleslaw or pickles if using.

Serve and Enjoy

  • Serve warm. Add extra barbecue sauce for more flavor. Perfect for lunch, dinner or a party platter.

Notes

  • Use chicken thighs for juicier meat. Breasts are leaner but still tasty.
  • Add chopped jalapeños or hot sauce for a spicy kick.
  • Mix in leftover cooked vegetables like bell peppers or onions for extra flavor.
  • Make sliders with mini buns for parties or gatherings.
  • Store leftover chicken separately from buns to prevent sogginess.
