Ingredients

  • 1 pound boneless skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 cup water
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 9-ounce package cheese tortellini
  • 2 cups fresh spinach or kale
  • ½ cup grated Parmesan cheese optional, for serving

These ingredients create a flavorful, wholesome soup that’s hearty and satisfying.

Instructions

Prepare the Vegetables

  • Dice carrots, celery, and onion. Mince garlic. Place all vegetables in the slow cooker for a fresh base.

Add Chicken and Broth

  • Place chicken breasts on top of vegetables. Pour chicken broth and water into the slow cooker.

Season the Soup

  • Add dried basil, oregano, salt, and black pepper. Stir gently to distribute seasoning without breaking the chicken.

Slow Cook

  • Cover and cook on low for 4 hours. Chicken becomes tender while flavors meld beautifully with vegetables and herbs.

Shred the Chicken

  • Remove chicken from slow cooker. Shred with two forks. Return shredded chicken to the soup for even distribution.

Add Tortellini

  • Add cheese tortellini to slow cooker. Cover and cook for an additional 10–12 minutes until tender but not overcooked.

Add Greens

  • Stir in fresh spinach or kale. Cook for 2–3 minutes until greens wilt, adding color and nutrition to the soup.

Taste and Adjust

  • Taste the soup. Adjust salt and pepper as needed. Ensure all flavors are balanced for the perfect bowl of soup.

Serve the Soup

  • Ladle soup into bowls. Sprinkle with grated Parmesan cheese if desired for extra flavor and richness.

Enjoy

  • Serve hot with crusty bread or a side salad. Enjoy the comforting taste of homemade Slow Cooker Chicken Tortellini Soup.

Notes

  • Use chicken thighs for more tender and flavorful meat.
  • Add a pinch of red pepper flakes for a mild spicy kick.
  • Substitute tortellini with small pasta shells or ravioli.
  • For creamier soup, add ½ cup heavy cream at the end.
  • Frozen tortellini can be used, but add a few extra minutes of cooking.
  • Leftovers taste even better the next day after flavors have melded.
