Ingredients

  • 1 pound ground beef
  • 12 oz smoked sausage sliced
  • 3 large potatoes diced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz pinto beans, drained
  • 1 can 15 oz corn, drained
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon dried oregano

Instructions

Brown the Ground Beef

  • Cook the ground beef in a skillet until fully browned. Break it into small pieces while cooking for even texture.

Add Onion and Garlic

  • Stir in chopped onion and garlic. Cook for two minutes until soft and fragrant before adding to the slow cooker.

Prepare the Slow Cooker

  • Place potatoes, pinto beans, corn, tomatoes, and sliced sausage inside the slow cooker and spread evenly across the bottom.

Add Seasonings

  • Sprinkle chili powder, smoked paprika, oregano, salt, and pepper on top of the vegetables and sausage mixture in the cooker.

Pour in the Broth

  • Slowly pour the beef broth into the cooker. Make sure all ingredients are covered well and ready to cook slowly.

Add the Ground Beef

  • Transfer the cooked ground beef mixture into the slow cooker. Spread it out gently without pressing too much.

Stir Everything Lightly

  • Give a gentle stir to mix the ingredients. Do not overmix because potatoes can break easily during stirring.

Cover and Cook

  • Close the slow cooker lid tightly. Cook on LOW for 6 hours or on HIGH for about 3 hours for faster cooking.

Check the Potatoes

  • Open the lid and check the potatoes. They should be soft and fully cooked before serving your warm stew.

Serve and Enjoy

  • Use a ladle to serve the stew into bowls. Add parsley, cheese, or sour cream if you like extra toppings.

Notes

  • Use canned Rotel for extra heat and flavor.
  • Add bacon for a smoky and rich taste.
  • Use sweet potatoes instead of regular potatoes for sweetness.
  • Add green chilies for spicy stew.
  • Replace smoked sausage with turkey sausage for lighter calories.
  • Add frozen peas during the last 20 minutes for color and texture.
  • Use beef chuck pieces instead of ground beef for chunky stew.
  • Add a splash of BBQ sauce for sweet-smoky flavor.
  • Stir in cooked pasta if you want a thicker meal.
  • Serve with cornbread for a perfect cowboy-style dinner.
