Ingredients
  

For the Chicken Marinade:

  • 500 g boneless chicken cut into cubes
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt to taste

For the Masala Sauce:

  • 2 tablespoons vegetable oil or ghee
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1- inch piece ginger grated
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder adjust to taste
  • 400 g canned tomatoes or tomato puree
  • 1/2 cup heavy cream or coconut milk
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste

Instructions
 

Prepare the Chicken Marinade

  • In a large bowl, combine yogurt, lemon juice, turmeric, garam masala, chili powder, cumin, and salt. Add chicken. Mix well.

Marinate the Chicken

  • Cover the bowl and refrigerate for at least 30 minutes. For best results, marinate 2–3 hours for deep flavor.

Cook the Chicken

  • Heat oil or ghee in a skillet. Add marinated chicken. Cook on medium heat until lightly browned, about 5–7 minutes.

Sauté Onions, Garlic, and Ginger

  • In the same skillet, add onions. Cook until soft. Stir in garlic and ginger. Sauté until fragrant for 1–2 minutes.

Add Spices to the Sauce

  • Add cumin, coriander, paprika, turmeric, and chili powder. Stir well. Cook for 1 minute to release flavors.

Add Tomatoes

  • Pour in tomato puree. Stir and simmer for 10 minutes until the sauce thickens slightly.

Combine Chicken and Sauce

  • Add the cooked chicken to the tomato sauce. Mix well. Simmer for another 10 minutes to absorb flavors.

Add Cream

  • Reduce heat to low. Stir in heavy cream or coconut milk. Simmer gently for 2–3 minutes for a smooth, rich texture.

Garnish and Serve

  • Remove from heat. Sprinkle fresh cilantro on top. Serve hot with rice, naan, or flatbread.
