Ingredients
  

For the Rice Layer

  • 3 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt

For the Salmon Mixture

  • 1 pound cooked salmon
  • ½ cup Japanese mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 teaspoon sesame oil
  • 2 green onions chopped
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder

For Toppings

  • 1 sheet nori cut into strips
  • 1 tablespoon sesame seeds
  • 1 avocado sliced
  • Extra sriracha drizzle
  • Green onions for garnish

Instructions
 

Prepare the Rice

  • Cook sushi rice according to package instructions. Let it cool slightly before seasoning with vinegar, sugar and salt mixture.

Season the Rice

  • Mix rice vinegar, sugar and salt together. Fold gently into warm sushi rice until evenly coated and flavorful.

Spread the Rice

  • Press seasoned sushi rice evenly into a greased baking dish. Use a spoon to flatten the surface smoothly.

Prepare the Salmon

  • Flake cooked salmon into small pieces using a fork. Remove any skin or bones before mixing ingredients together.

Make the Spicy Mixture

  • Add mayonnaise, sriracha, sesame oil, soy sauce, garlic powder and green onions into the salmon. Mix until creamy and smooth.

Spread the Salmon

  • Spoon the salmon mixture over the rice layer. Spread evenly so every bite has balanced flavor and texture.

Preheat the Oven

  • Set the oven to 400 degrees Fahrenheit. Allow the oven to heat fully before baking the sushi casserole.

Bake the Dish

  • Place the baking dish inside the oven. Bake for about fifteen minutes until hot and lightly golden on top.
