Ingredients
  

  • 4 cups fresh baby spinach leaves
  • 1 cup fresh blueberries
  • ½ cup sliced almonds or pecans toasted
  • ½ small red onion thinly sliced
  • ½ cup crumbled feta cheese optional
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions
 

Prepare the spinach

  • Rinse spinach leaves thoroughly. Pat dry using paper towels or a salad spinner to remove excess water.

Slice onions

  • Peel and thinly slice red onion. Add to a small bowl and set aside for salad assembly.

Toast nuts

  • Heat a small pan over medium heat. Toast almonds or pecans for 3–4 minutes until fragrant. Cool slightly.

Make dressing

  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt and pepper until smooth.

Combine salad ingredients

  • In a large mixing bowl, add spinach, blueberries, toasted nuts and sliced onions. Gently toss to combine.

Add cheese

  • Sprinkle crumbled feta cheese over salad if using. Toss gently to distribute evenly without crushing blueberries.

Dress the salad

  • Pour dressing over salad. Toss lightly to coat all ingredients with dressing. Adjust seasoning if needed.

Serve immediately

  • Transfer salad to a serving bowl or plate. Serve fresh for best texture and flavor.

Optional garnish

  • Add extra berries or a few more nuts on top for a visually appealing presentation.
