Ingredients

  • 12 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup cooked spinach chopped
  • 1 egg
  • 2 cups marinara sauce
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Olive oil for greasing

Instructions

Boil the Lasagna Noodles

  • Fill a large pot with water and salt. Boil noodles until just tender. Drain and lay flat.

Prepare the Spinach

  • If using fresh spinach, cook until wilted. Squeeze out extra water. Chop finely for smooth filling.

Mix the Cheese Filling

  • Add ricotta, mozzarella, Parmesan, egg, garlic, and seasonings. Mix until creamy and well combined.

Add the Spinach

  • Stir chopped spinach into the cheese mixture. Mix gently so everything stays smooth and even.

Prepare the Baking Dish

  • Lightly grease the baking dish with olive oil. Spread a thin layer of marinara sauce on bottom.

Fill the Noodles

  • Lay noodles flat. Spread cheese mixture evenly along each noodle from end to end.

Roll Them Up

  • Carefully roll each noodle into a tight spiral. Place seam side down in baking dish.

Add Sauce on Top

  • Pour remaining marinara sauce over the roll ups. Make sure they are fully covered.

Add Extra Cheese

  • Sprinkle extra mozzarella and Parmesan on top. This makes the top golden and bubbly.

Bake Covered

  • Cover dish with foil. Bake in preheated oven at 375°F for 25 minutes.

Bake Uncovered

  • Remove foil. Bake for another 10 minutes until cheese melts and sauce bubbles.

Rest Before Serving

  • Let the roll ups rest for five minutes. This helps them set and taste better.

Notes

  • Use frozen spinach to save time. Just thaw and squeeze well.
  • Add cooked mushrooms for extra texture and flavor.
  • Use cottage cheese instead of ricotta for lighter filling.
  • Add red pepper flakes for a spicy touch.
  • Use Alfredo sauce instead of marinara for creamy version.
