Ingredients

  • 500 g boneless chicken breast thin slices
  • 6 cloves fresh garlic finely chopped
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon light cooking oil
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 cup sliced bell peppers
  • 1 cup sliced spring onions
  • 1 small carrot thin strips
  • ΒΌ cup water or chicken broth
  • Salt to taste
  • Black pepper to taste

Instructions

Marinate the Chicken

  • Add soy sauce, cornstarch, and vinegar to the chicken. Mix well and rest for ten minutes.

Heat the Pan

  • Place oil in a hot wok. Wait until the oil becomes light and shiny before cooking.

Cook the Chicken

  • Add chicken slices to the pan. Stir fast until the pieces turn white and lightly golden.

Add Garlic and Ginger

  • Add garlic and ginger to the pan. Stir gently until the aroma becomes strong and pleasant.

Add Vegetables

  • Add peppers, carrots, and spring onions. Stir-fry quickly to keep the vegetables crisp and bright.

Pour the Sauce

  • Add oyster sauce, sugar, broth, and sesame oil. Mix everything until the sauce coats the chicken.

Let It Simmer

  • Let the pan simmer for one minute. The sauce becomes thick and glossy during this short time.

Final Seasoning

  • Taste the dish. Add salt and pepper if needed. Mix again so flavors stay even.

Turn Off Heat

  • Switch off the heat. Leave the pan for a few seconds. This keeps the chicken tender and juicy.

Serve Fresh

  • Serve the dish hot over rice. Enjoy the rich garlic aroma and soft chicken texture.

Notes

  • Use chicken thighs for a juicier taste.
  • Add chili flakes for a spicy version.
  • Replace chicken with tofu for a vegetarian option.
  • Slice chicken very thin. It cooks fast and stays soft.
  • Do not overcook the garlic. Burned garlic tastes bitter.
  • Use high heat for real stir-fry flavor.
  • Add broccoli or snow peas for extra crunch.
  • Serve with fried rice or plain noodles.
  • Double the sauce if you like more gravy.
  • Marinate longer for deeper flavor.
