Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Unsalted butter softened
  • Granulated sugar
  • Brown sugar
  • Large egg
  • Vanilla extract
  • Strawberry extract or powder
  • Golden sandwich cookies
  • Freeze-dried strawberries
  • White chocolate chips

Instructions

Prepare the Crunch Topping

  • Put sandwich cookies and freeze-dried strawberries in a food processor. Pulse until coarse crumbs form. Set aside for later use.

Mix Dry Ingredients

  • Add flour, baking powder, and salt to a bowl. Whisk gently until everything looks evenly mixed.

Cream Butter and Sugars

  • Beat butter, white sugar, and brown sugar until light and fluffy. This step helps cookies stay soft.

Add Egg and Flavor

  • Mix in the egg, vanilla extract, and strawberry flavor. Beat until smooth and creamy.

Combine Wet and Dry

  • Slowly add dry ingredients to wet mixture. Mix gently until a soft dough forms.

Fold in Chocolate Chips

  • Add white chocolate chips to the dough. Stir gently so they spread evenly.

Chill the Dough

  • Place dough in the fridge for ten minutes. This helps cookies bake evenly.

Shape the Cookies

  • Scoop dough into balls. Roll each ball in strawberry crunch crumbs.

Arrange on Baking Sheet

  • Place dough balls on lined baking sheet. Leave space between each cookie.

Bake the Cookies

  • Bake in a preheated oven at 350°F for twelve minutes. Edges should look set.

Cool Properly

  • Let cookies cool on the tray briefly. Transfer to a rack to cool fully.

Notes

  • Use freeze-dried strawberries for stronger flavor and bright color.
  • Do not overbake, or cookies may become dry.
  • Chill dough longer for thicker cookies.
  • Add pink food color for extra visual appeal.
  • Swap white chocolate with milk chocolate if preferred.
