Ingredients
  

  • 200 g digestive biscuits or graham crackers
  • 100 g melted butter
  • 400 g cream cheese softened
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons matcha powder
  • 2 tablespoons hot milk
  • 1 cup fresh strawberries
  • 2 tablespoons strawberry jam or puree
  • 2 eggs
  • 1 tablespoon cornstarch
  • Pinch of salt

Instructions
 

Prepare the Biscuit Base

  • Crush biscuits into fine crumbs. Mix with melted butter. Press into pan firmly. Chill in fridge for ten minutes.

Make Strawberry Puree

  • Blend fresh strawberries until smooth. Add strawberry jam. Mix well and set aside.

Mix Cream Cheese

  • Beat cream cheese until smooth. Add sugar slowly. Mix until creamy and fluffy.

Add Eggs and Vanilla

  • Add eggs one by one. Mix gently. Add vanilla extract and salt.

Prepare Matcha Mixture

  • Mix matcha powder with hot milk. Stir until smooth. No lumps should remain.

Divide the Batter

  • Split cheesecake batter into two bowls. One for matcha. One for strawberry.

Make Matcha Layer

  • Add matcha mixture into first bowl. Mix until green and smooth.

Make Strawberry Layer

  • Add strawberry puree into second bowl. Mix until pink and creamy.

Layer the Cheesecake

  • Pour matcha layer on biscuit base. Then gently add strawberry layer on top.

Bake the Cheesecake

  • Bake at 160°C for 50 minutes. Center should slightly jiggle when done.

Cool Properly

  • Turn off oven. Leave door open. Let cheesecake cool slowly inside oven.

Chill Before Serving

  • Refrigerate for four hours or overnight. This helps set texture perfectly.
