Ingredients
  

  • 4 medium sweet potatoes
  • 1 can black beans drained and rinsed
  • 1 ripe avocado
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Juice of 1 lime

Optional toppings: chopped cilantro, shredded cheese, hot sauce

Instructions
 

Preheat the Oven

  • Set your oven to 400°F (200°C). Line a baking tray with foil for easy cleaning.

Prepare Sweet Potatoes

  • Wash sweet potatoes well. Pat dry. Pierce each sweet potato several times with a fork.

Roast Sweet Potatoes

  • Place sweet potatoes on the tray. Brush lightly with olive oil. Roast for 45–50 minutes until soft.

Heat Black Beans

  • While potatoes roast, heat a small skillet over medium heat. Add black beans, cumin, paprika, salt, and pepper. Stir for 5 minutes.

Prepare Avocado

  • Cut avocado in half. Remove the seed. Scoop the flesh into a bowl. Mash lightly with a fork. Add lime juice for flavor.

Slice Sweet Potatoes

  • Remove potatoes from the oven. Let them cool slightly. Slice them lengthwise down the middle.

Stuff Sweet Potatoes

  • Open the sweet potatoes gently. Spoon black beans inside each potato generously.

Add Avocado

  • Top each stuffed potato with mashed avocado. Spread evenly for creamy texture.

Add Optional Toppings
