Ingredients

  • Red bell pepper thinly sliced
  • Purple cabbage shredded
  • Fresh lettuce leaves
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Cooked shrimp or tofu optional

For the peanut sauce:

  • Peanut butter
  • Soy sauce
  • Lime juice
  • Honey or brown sugar
  • Garlic minced
  • Warm water
  • Chili sauce optional

Instructions
 

Prepare the vegetables

  • Wash all vegetables well. Cut them into thin strips. Keep everything ready before rolling.

Cook the noodles

  • Cook rice noodles using package instructions. Drain them well. Let them cool completely.

Mix the peanut sauce

  • Add peanut butter, soy sauce, lime juice, honey, garlic, and water. Whisk until smooth and creamy.

Taste the sauce

  • Taste the sauce carefully. Add more lime, honey, or water if needed.

Soften the rice paper

  • Fill a shallow dish with warm water. Dip one rice paper for ten seconds only.

Lay the wrapper flat

  • Place softened rice paper on a clean towel. Let it rest until soft and sticky.

Add lettuce first

  • Place lettuce near the bottom center. This helps protect the wrapper from tearing.

Add noodles and vegetables

  • Add a small amount of noodles. Top with carrots, cucumber, cabbage, and peppers.

Add herbs and protein

  • Add mint and cilantro leaves. Add shrimp or tofu if using.
  • Start rolling
  • Fold the bottom edge over the filling. Keep it tight but gentle.

Fold the sides

  • Fold left and right sides inward. This seals the filling inside.

Finish rolling

  • Roll upward until closed. Place seam side down on a plate.

Repeat the process

  • Repeat with remaining wrappers and fillings. Work slowly for best results.

Serve with sauce

  • Serve rolls fresh with peanut sauce on the side.
