Ingredients
  

  • 1 pound tomatillos husked
  • 2 fresh jalapeños
  • 1 garlic clove
  • ½ cup fresh cilantro
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 tablespoon lime juice
  • ¼ cup water
  • 1 tablespoon oil

Instructions
 

Prep the Tomatillos

  • Remove the husks from the tomatillos. Wash them well because they feel sticky when fresh.

Boil the Tomatillos

  • Place the tomatillos in a pot. Add water and boil for ten minutes until soft.

Prepare the Jalapeños

  • Cut the jalapeños in half. Remove seeds for mild heat or keep them for stronger heat.

Blend the Base

  • Add tomatillos, jalapeños, garlic, cilantro, salt, sugar, and lime juice to your blender.

Blend Until Smooth

  • Blend for one minute. Stop when the sauce looks smooth and bright green.

Adjust the Texture

  • If the sauce looks thick, add a little water. Blend again for a few seconds.

Heat the Sauce

  • Pour the blended sauce into a pan. Cook on low heat for five minutes to deepen flavor.

Add Oil for Shine

  • Add oil to the sauce while cooking. Stir gently to make the sauce glossy and rich.

Taste and Adjust

  • Taste the sauce after cooking. Add more salt or lime juice if you want stronger flavor.

Cool Before Serving

  • Turn off the heat. Let the sauce cool completely before placing it in a container.
