Instructions

Prepare the Pork

  • Cut pork into bite-sized pieces. Pat dry to remove moisture for better searing.

Heat the Skillet

  • Add vegetable oil to a large skillet. Heat over medium-high heat until shimmering.

Sear the Pork

  • Add pork bites in a single layer. Cook for 3-4 minutes per side until golden brown. Remove and set aside.

Cook the Onions

  • Add chopped onion to the skillet. Sauté for 2-3 minutes until soft and fragrant.

Add Garlic

  • Stir in minced garlic. Cook for one minute until fragrant but not burnt.

Make the Gravy

  • Sprinkle flour over onions and garlic. Stir well for one minute to cook the raw flour taste.

Add Broth

  • Slowly pour in chicken broth while stirring continuously. This prevents lumps and creates smooth gravy.

Season the Gravy

  • Add salt, black pepper and thyme. Stir well and simmer for 2 minutes.

Return Pork to Skillet

  • Add seared pork bites back into the skillet. Simmer for 5-7 minutes until pork is tender and gravy thickens.

Finish with Butter and Garnish

  • Stir in butter for richness. Garnish with fresh parsley before serving hot.

Notes

  • Use pork shoulder for juicier bites.
  • Add mushrooms for extra flavor and texture.
  • Replace thyme with rosemary or sage for a different aroma.
  • Serve with mashed potatoes, rice, or crusty bread.
  • For thicker gravy, cook a few extra minutes or add a cornstarch slurry.
  • Don’t overcrowd the pan while searing pork to ensure golden color.
  • Rest pork briefly before serving for maximum tenderness.
