Ingredients
  

  • 500 grams boneless skinless chicken breast, diced
  • 1 tablespoon olive oil
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 3 garlic cloves finely chopped
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 12 –16 large lettuce leaves
  • 2 green onions thinly sliced
  • 1 tablespoon sesame seeds
  • ¼ teaspoon black pepper
  • ½ teaspoon chili flakes or sriracha optional

Instructions
 

Prepare the Chicken

  • Cut the chicken into small, even pieces. Season lightly with black pepper and set aside.

Make the Teriyaki Sauce

  • In a bowl, mix soy sauce, honey, rice vinegar, garlic, ginger, sesame oil, cornstarch, and water.

Heat the Pan

  • Place a skillet over medium heat. Add olive oil and allow it to heat for one minute.

Cook the Chicken

  • Add chicken to the pan. Cook for five to six minutes, stirring often, until fully cooked.

Add the Sauce

  • Pour the teriyaki sauce over the chicken. Stir well to coat every piece evenly.

Simmer the Chicken

  • Let the mixture simmer for three to four minutes. The sauce will thicken slightly.

Taste and Adjust

  • Taste the chicken and adjust sweetness or thickness if needed using water or honey.

Prepare the Lettuce

  • Wash the lettuce leaves gently and dry them completely. Keep the leaves whole.

Assemble the Wraps

  • Spoon warm teriyaki chicken into each lettuce leaf. Do not overfill the wraps.
