Ingredients
  

  • 6 medium Russet potatoes peeled and diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 celery stalks diced
  • 4 cups chicken or vegetable stock
  • 1 cup milk
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme fresh or dried
  • ¼ cup chopped fresh parsley

Instructions
 

  • Prepare Vegetables
  • Peel and dice potatoes. Chop onion and celery. Mince garlic. Keep everything ready for cooking.

Sauté Onion, Garlic, Celery

  • In a large pot, melt butter over medium heat. Add onion, garlic and celery. Cook until soft.

Make Roux
