Ingredients
  

For the cake:

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries finely chopped
  • 2 tablespoons fresh mint leaves finely chopped

For the spirit glaze:

  • 2 tablespoons strawberry liqueur or light rum
  • ½ cup powdered sugar
  • 1 tablespoon fresh strawberry juice

Instructions
 

Preheat the Oven

  • Preheat your oven to 180°C or 350°F. Grease and line your cake pan with parchment paper.

Mix Dry Ingredients

  • In a bowl, mix flour, baking powder, baking soda and salt. Stir well and set aside.

Cream Butter and Sugar

  • In another bowl, beat softened butter and sugar until light and fluffy.

Add Eggs

  • Add eggs one at a time. Mix well after each addition until smooth.

Add Vanilla and Milk

  • Pour in vanilla extract and milk. Mix gently until combined.

Combine Dry and Wet

  • Gradually add dry mixture into wet mixture. Stir gently without overmixing.

Add Strawberries and Mint

  • Fold chopped strawberries and mint into the batter. Mix carefully and evenly.

Pour into Pan

  • Pour batter into prepared pan. Smooth the top with a spatula.

Bake the Cake

  • Bake for 35 to 40 minutes. A toothpick inserted in center should come out clean.

Cool Completely

  • Remove cake from oven. Let it cool in pan for 10 minutes, then transfer to rack.

  • Mix powdered sugar, strawberry juice and spirit until smooth and slightly thick.
