Ingredients
  

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons purple food coloring
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 cup cream cheese
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.

Separate the Eggs

  • Separate the egg whites from yolks. Place whites in a large bowl and yolks in another small bowl.

Beat Egg Yolks

  • Add half of the sugar to the egg yolks. Beat with a whisk or mixer until thick and pale.

Mix Wet Ingredients

  • Add milk, vegetable oil, vanilla and purple food coloring to the yolks. Mix until smooth and fully combined.

Combine Dry Ingredients

  • Sift flour, cornstarch, baking powder and salt into the egg yolk mixture. Fold gently to avoid deflating.

Whip Egg Whites

  • Beat egg whites until soft peaks form. Gradually add remaining sugar and beat until stiff peaks form.

Fold Whites into Batter

  • Gently fold the whipped egg whites into the batter. Do this slowly to keep the cake light and fluffy.

Bake the Cake

  • Pour batter into the prepared pan. Smooth the top and bake for 12–15 minutes until the cake springs back lightly.

Prepare the Towel

Roll Again
