Ingredients
  

For the Chocolate Sponge Base:

  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

For the Dark Chocolate Mousse:

  • 4 oz dark chocolate chopped
  • 1/2 cup heavy whipping cream

For the Milk Chocolate Mousse:

  • 4 oz milk chocolate chopped
  • 1/2 cup heavy whipping cream
  • For the White Chocolate Mousse:
  • 4 oz white chocolate chopped
  • 1/2 cup heavy whipping cream

For Topping:

  • Chocolate shavings or curls
  • Optional: cocoa powder or cocoa dust

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.

Make the Sponge Base

  • In a bowl, mix flour, cocoa powder, baking powder and salt. In another bowl, beat eggs, sugar, oil, and vanilla until smooth.

Combine Sponge Ingredients

  • Gently fold the dry ingredients into the wet mixture until fully combined. Pour the batter into the prepared pan.

Bake the Sponge

  • Bake the sponge for 18–20 minutes or until a toothpick comes out clean. Let it cool completely on a wire rack.

Prepare Dark Chocolate Mousse

  • Melt dark chocolate in a saucepan or microwave. Whip 1/2 cup heavy cream until stiff peaks form. Fold whipped cream into melted chocolate gently.

Spread Dark Mousse

  • Pour dark chocolate mousse over cooled sponge. Smooth the surface and refrigerate for 30 minutes to set.

Prepare Milk Chocolate Mousse

  • Melt milk chocolate. Whip 1/2 cup heavy cream to stiff peaks. Fold cream into chocolate gently. Pour over dark mousse layer and chill 30 minutes.

Prepare White Chocolate Mousse

  • Melt white chocolate. Whip 1/2 cup heavy cream. Fold cream into white chocolate. Pour over milk chocolate layer and smooth the top. Chill for 1–2 hours.

Decorate the Cake

  • Top the set mousse cake with chocolate shavings or curls. Optionally, dust lightly with cocoa powder for extra elegance.

Serve and Enjoy

  • Carefully remove the cake from the springform pan. Slice with a sharp knife and serve chilled for the best texture.
