Ingredients
  

  • 1 cup cooked quinoa
  • 1 can tuna drained
  • 1/2 cup cucumber chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/2 avocado sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or cilantro for garnish

Instructions
 

Cook the quinoa

  • Rinse quinoa and cook in water until soft. Let it cool slightly before using in the bowl.

Prepare vegetables
