Ingredients
  

  • 2 cups cold cooked jasmine rice
  • 2 eggs beaten
  • 3 tablespoons vegetable oil
  • 2 garlic cloves minced
  • 2 tablespoons soy sauce
  • 1 teaspoon oyster sauce optional
  • 1/4 teaspoon white or black pepper
  • 2 green onions chopped
  • 1/2 cup frozen peas and carrots optional
  • 1 teaspoon sesame oil

Instructions
 

Prepare Rice

  • Use cold rice. Break any clumps with hands or fork. Set aside for cooking.

Beat Eggs

  • Crack eggs in a bowl. Beat with fork. Add a pinch of salt for taste.

Heat Oil

  • Heat wok on medium-high. Add 2 tablespoons oil. Swirl to cover the pan.

Cook Eggs

  • Pour beaten eggs in pan. Stir gently. Cook until soft. Remove and set aside.

Sauté Garlic

  • Add remaining oil. Add minced garlic. Stir 30–60 seconds. Do not burn.

Add Vegetables

  • Add peas and carrots if using. Stir 1–2 minutes until soft.

Add Rice

  • Add cold rice. Stir fast to mix with garlic and vegetables. Break rice clumps.

Add Sauces

  • Pour soy sauce and oyster sauce if using. Stir well to coat rice.

Add Eggs Back

  • Return cooked eggs to pan. Stir gently. Mix all ingredients together.

Add Seasoning

  • Sprinkle pepper. Drizzle sesame oil. Stir one last time.

Add Green Onions

  • Add chopped green onions. Toss lightly. Remove from heat.

Serve Hot

  • Put fried rice in a plate or bowl. Serve immediately for best taste.

Notes

  • Always use cold rice. Fresh rice can become sticky.
  • Add cooked chicken, shrimp, or pork for more protein.
  • Adjust soy sauce and oyster sauce to your taste.
  • Cook on high heat for best stir-fry flavor.
  • Sprinkle sesame seeds or fried shallots for extra crunch.
