Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup carrots sliced thin
  • 1 cup snap peas
  • 1 small onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated

For the Peanut Sauce

  • ½ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lemon juice
  • 1 teaspoon sesame oil
  • ¼ cup warm water
  • Red chili flakes optional

Instructions
 

Prepare the Vegetables

  • Wash all vegetables well. Cut them into even sizes. This helps them cook evenly and quickly.

Make the Peanut Sauce

  • Add peanut butter, soy sauce, honey, vinegar, sesame oil, and water to a bowl. Whisk until smooth.

Heat the Pan

  • Heat oil in a large pan over medium-high heat. Make sure the pan is hot before adding vegetables.

Cook Onion

  • Add sliced onion to the pan. Stir for two minutes until soft and slightly golden.

Add Garlic and Ginger

Simmer Briefly
