Ingredients
  

  • 4 corn on the cob
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese or feta
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • Fresh cilantro for garnish

Instructions
 

Prepare the corn

  • Remove husks and clean the corn. Pat dry before cooking for better charring.

Grill the corn

  • Place corn on grill or pan. Cook on medium heat, turning until lightly charred on all sides.

Make the sauce

  • In a bowl, mix mayonnaise, sour cream, lime juice, salt and pepper until smooth.

Apply the sauce

  • Brush or spread the creamy mixture evenly over hot corn for better coating.

Add cheese

  • Sprinkle crumbled cheese over the corn. Press lightly so it sticks to the sauce.
