Instructions
 

Make The Simple Syrup

  • Combine sugar and water in a saucepan. Heat until the sugar completely dissolves, then cool.

Blend The Watermelon

  • Place the watermelon cubes into a blender and blend until completely smooth.

Strain The Juice

  • Pour the blended watermelon through a fine-mesh strainer to remove any pulp.

Mix The Ingredients

  • Combine the watermelon juice, cooled syrup, lime juice and lime zest in a large bowl.

Pour Into A Dish

  • Transfer the mixture into a shallow freezer-safe dish for even freezing.

Freeze The Mixture

  • Freeze for one hour until the edges begin to firm.

Scrape With A Fork

  • Use a fork to scrape the frozen edges toward the center, creating small ice crystals.

Continue Freezing

  • Return the dish to the freezer for another hour.

Repeat Scraping

  • Scrape the granita again with a fork to create a fluffy texture.

Freeze Until Firm

  • Continue freezing and scraping every thirty to sixty minutes until completely frozen.

Fluff Before Serving

  • Use a fork one final time to loosen the ice crystals before serving.

Garnish And Enjoy

  • Spoon into chilled glasses and garnish with mint leaves and lime wedges.
