Ingredients
  

  • 2 pounds lean beef eye of round or top round
  • ½ cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon liquid smoke
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 1 teaspoon kosher salt

  • Cracked black pepper
  • Cayenne pepper
  • Chili powder
  • Honey
  • Sesame seeds

Instructions
 

Slice The Beef

  • Partially freeze the beef for easier slicing, then cut into thin, even strips.

Prepare The Marinade

  • Combine soy sauce, Worcestershire sauce, liquid smoke, brown sugar and all seasonings in a bowl.

Marinate The Beef

  • Place the beef into the marinade and coat every piece evenly.

Refrigerate Overnight

  • Cover and refrigerate the beef for at least twelve hours.

Drain The Beef

  • Remove the beef from the marinade and discard the remaining liquid.

Pat Dry

  • Use paper towels to remove excess moisture from each strip.

Arrange The Beef

  • Place the strips in a single layer on dehydrator trays or oven racks.

Begin Drying

  • Dry at 160°F for about four hours or until the jerky reaches your preferred texture.

Check The Texture

  • The jerky should bend without breaking and should not feel wet.

Cool Completely

  • Allow the jerky to cool before storing.

Store Properly

  • Transfer the jerky to airtight containers or resealable bags.
