Ingredients
  

  • 3 large zucchinis
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 ½ cups Alfredo sauce
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions
 

Prepare the Zucchini

  • Wash the zucchini well. Slice it lengthwise into thin strips. Use a peeler or mandoline for even slices.

Remove Extra Moisture

  • Lay the zucchini slices on paper towels. Sprinkle a little salt. Let them rest for ten minutes to remove moisture.

Cook the Garlic

  • Heat olive oil in a skillet over medium heat. Add minced garlic and cook for one minute until fragrant.

Prepare the Chicken Filling

  • In a bowl, mix shredded chicken, ricotta cheese, garlic, parmesan, salt, pepper and Italian seasoning until creamy and well combined.

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.

Add Alfredo Sauce

  • Spread a thin layer of Alfredo sauce across the bottom of the baking dish. This prevents sticking.

Add the Filling

  • Place a spoon of chicken mixture on one zucchini slice. Spread evenly but leave space at the edges.

Roll the Zucchini

  • Carefully roll the zucchini slice around the filling. Place it seam-side down in the baking dish.

Repeat the Process

  • Continue filling and rolling each zucchini slice. Arrange them neatly in the baking dish.

Add the Sauce

  • Pour the remaining Alfredo sauce over the zucchini rolls. Make sure each roll gets covered slightly.

Add Cheese

  • Sprinkle mozzarella cheese evenly over the top. This will melt and create a golden, cheesy layer.

Bake the Dish

  • Place the baking dish in the oven. Bake for about 25–30 minutes until bubbly and lightly golden.

Rest Before Serving

  • Remove the dish from the oven. Let it rest for five minutes before serving.

Garnish and Serve

  • Top with fresh chopped parsley and extra parmesan cheese if desired. Serve warm and enjoy.

Notes

  • Slice zucchini thin for easy rolling. Thick slices may break or not cook evenly.
  • Pat zucchini dry to avoid watery sauce. Zucchini naturally contains a lot of water.
  • Use rotisserie chicken for faster preparation. It saves time and adds flavor.
  • Add spinach to the filling for extra nutrition.
  • Try grilled chicken for a smoky taste.
