Instructions

Prepare ingredients

  • Chop onion, carrots, celery and garlic. Shred leftover turkey into small pieces for easy eating.

Cook vegetables

  • Heat olive oil in a large pot. Add onion, carrots and celery. Cook until soft and fragrant.

Add garlic

  • Add minced garlic and cook for one minute. This adds strong flavor to the soup base.

Pour broth

  • Add broth into the pot. Bring to a gentle boil for cooking the soup.

Add turkey and rice

  • Add shredded turkey and rice. Stir well so everything combines evenly.

Add seasoning

  • Add salt, pepper and thyme. Mix well for balanced flavor.

Simmer the soup

  • Cook on low heat for 20 minutes. This helps flavors blend and rice soften.

Serve and garnish

  • Serve hot and garnish with fresh parsley for color and taste.
