Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 4 cups cabbage chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions
 

Heat Oil

  • Heat olive oil in a large pot over medium heat until warm.

Cook Onion

  • Add chopped onion and cook for 3–4 minutes until soft and translucent.

Add Garlic

  • Stir in garlic and cook for one minute until fragrant.

Add Vegetables

  • Add cabbage, carrots and celery. Stir well to combine.

Add Tomatoes

  • Pour in diced tomatoes and mix everything together.

Add Broth

  • Add broth and stir well. Bring the soup to a boil.

Season Soup

  • Add salt, pepper, paprika and thyme. Mix well.

Simmer

  • Reduce heat and simmer for 30 minutes until vegetables are tender.

Taste and Adjust

  • Taste the soup and adjust seasoning if needed.

Serve Hot
