Ingredients
  

For the Pork Chops

  • 4 boneless pork chops
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Vegetable oil for frying

For the Gravy

  • 2 tablespoons pan drippings
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • Salt to taste
  • Black pepper to taste

Instructions
 

Prepare the pork chops

  • Pat the pork chops dry with paper towels. This helps the coating stick better during frying.

Season the flour

  • In a shallow bowl, mix flour, salt, pepper, garlic powder and paprika until evenly combined.

Make egg mixture

  • In another bowl, whisk eggs and buttermilk until smooth. This helps create a crispy coating.

Coat the pork chops

  • Dip each pork chop into flour, then egg mixture, then flour again for double coating.

Heat the oil

  • Heat vegetable oil in a large skillet over medium heat until hot enough for frying.

Fry the pork chops

  • Cook pork chops for 4–5 minutes per side until golden brown and fully cooked inside.

Make the gravy

  • Remove extra oil, leaving drippings. Add flour and whisk in milk until smooth and creamy.

Serve hot

  • Pour warm gravy over crispy pork chops and serve immediately.

  • Use boneless chops for faster cooking
  • Let coated pork rest before frying
  • Add cayenne pepper for heat
