  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1 bay leaf
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions
 

Heat the butter and oil

  • Place a large pot on medium heat. Add butter and olive oil. Let them melt together and become slightly bubbly before adding vegetables.

Cook the vegetables

  • Add chopped onion, carrots and celery into the pot. Stir well and cook for about five minutes until soft and slightly golden.

Add garlic

  • Put minced garlic into the pot. Stir for one minute until fragrant. Do not burn the garlic, as it can taste bitter.

Pour the broth

  • Add chicken broth slowly into the pot. Stir everything together and bring the mixture to a gentle boil.

Add seasonings

  • Put salt, black pepper, thyme, parsley and bay leaf into the soup. Stir well so flavors mix evenly.

Add chicken

  • Add shredded cooked chicken into the pot. Stir gently and let it cook in the broth for ten minutes.

Add noodles

  • Put egg noodles into the soup. Cook for 8 to 10 minutes until noodles are soft and tender.

Add lemon juice

  • Pour a small amount of lemon juice into the soup. This adds brightness and balances the flavors perfectly.

Taste and adjust

  • Taste the soup carefully. Add more salt or pepper if needed. Remove the bay leaf before serving.
