Ingredients

  • 2 tablespoons butter
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 pound fresh spinach
  • 4 ounces cream cheese
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg

Instructions

Prepare the Spinach

  • Wash spinach carefully under cold water. Drain well and remove any thick stems before cooking completely.

Cook the Onion

  • Melt butter in a large skillet over medium heat. Add onion and cook until soft and translucent.

Add Garlic

  • Stir minced garlic into the skillet. Cook for one minute until fragrant without burning the garlic pieces.

Cook the Spinach

  • Add spinach to the skillet slowly. Stir often until spinach wilts completely and reduces in size nicely.

Remove Extra Water

  • Drain excess liquid from cooked spinach carefully. This step keeps the creamed spinach thick and creamy later.

Add Cream Cheese

  • Place cream cheese into the skillet. Stir gently until fully melted and mixed into the spinach evenly.

Pour Heavy Cream

  • Add heavy cream slowly while stirring continuously. Cook on low heat until mixture becomes smooth and creamy.

Add Parmesan Cheese

  • Mix parmesan cheese into the skillet carefully. Stir well until cheese melts completely into the creamy sauce.

Season the Dish

  • Add salt, black pepper and nutmeg. Stir gently so the flavors spread evenly through the spinach mixture.

Simmer Briefly

  • Cook the creamed spinach for three minutes on low heat. Stir often until thick and creamy throughout.

Serve Warm

  • Remove skillet from heat carefully. Serve warm with your favorite meat dishes or holiday meals immediately.

Notes

  • Squeeze frozen spinach well before cooking.
  • Use fresh parmesan cheese for better flavor.
  • Do not overcook spinach or it may become mushy.
  • Add mozzarella cheese for extra creaminess.
  • Sprinkle bacon pieces on top before serving.
  • Use half-and-half for a lighter version.
  • Add red pepper flakes for slight spice.
  • Stir continuously to prevent cream from separating.
  • Serve immediately for best texture and flavor.
  • Add mushrooms for extra richness and taste.
