Ingredients
  

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper
  • 4 cups chicken broth
  • 1 can crushed tomatoes
  • 2 tablespoons tomato paste
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions
 

Cook the Sausage

  • Heat olive oil in a large pot. Add Italian sausage. Cook until brown and fully cooked. Break meat into small pieces.

Add Onion and Garlic

  • Add chopped onion to the pot. Cook until soft and clear. Stir in garlic and cook for one minute.

Season the Soup

  • Add Italian seasoning and crushed red pepper. Stir everything well. The spices will make the soup smell rich and delicious.

Pour the Broth

  • Add chicken broth, crushed tomatoes and tomato paste. Stir until smooth. Let the soup gently simmer for ten minutes.

Add Lasagna Noodles

  • Break lasagna noodles into small pieces. Add them to the pot. Stir well so noodles cook evenly in broth.

Simmer the Soup

  • Cook the soup for about fifteen minutes. Stir sometimes to prevent sticking. Noodles should become soft and tender.

Prepare the Cheese Mixture

  • Mix ricotta cheese, mozzarella cheese and parmesan cheese in a bowl. Stir until creamy and fully combined together.

Taste and Adjust

  • Taste the soup carefully. Add salt and black pepper if needed. Adjust seasoning according to your personal taste.
