Ingredients
  

  • 1 5 to 6-pound prime rib roast
  • 4 tablespoons softened butter
  • 6 garlic cloves minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 teaspoon paprika

Instructions
 

Bring Meat to Room Temperature

  • Remove the roast from the refrigerator. Let it sit for one hour before cooking.

Preheat the Oven

  • Set your oven to 450°F so it gets very hot.

Make the Herb Butter

  • Mix butter, garlic, olive oil, rosemary, thyme, salt, pepper, onion powder and paprika in a bowl.

Season the Roast

  • Rub the herb butter mixture all over the prime rib roast.

Place in Roasting Pan

  • Put the roast fat side up in the roasting pan.

Start with High Heat

  • Roast for 20 minutes to create a beautiful crust.

Lower the Temperature

  • Reduce oven temperature to 325°F and continue cooking until desired doneness.
  • Check Internal Temperature
  • Cook until thermometer reads:
  • 120°F for rare
  • 130°F for medium-rare
  • 140°F for medium

Rest the Meat

  • Remove from oven and cover loosely with foil. Rest for 20 minutes.

Slice and Serve

  • Cut into thick slices and serve warm.

Notes

  • Use bone-in prime rib for extra flavor.
  • Add horseradish sauce for serving.
  • Do not skip resting time.
  • Use fresh herbs for better taste.
  • Add mushrooms as a side dish.
  • Try garlic powder if fresh garlic is unavailable.
